Decide quantity of sugar to use - do not use more than 6kg if the air temperature is above 25 Deg.C.
First prepare water making sure that it is as close as possible to the target start temperature. Adjust the temperature if necessary with hot or cold water. Adjust water start volume to exactly 21 litres. Now add the sugar and stiruntil completely dissolved. Add the yeast by sprinkling on the surface and stir well, rest the lid loosely on the fermenter and leave to ferment at the correct temperature.
